I was so excited when I first spotted the chanterelle mushrooms growing in my backyard. I raved about them in my newsletter.
I picked them and washed them and dehydrated them and cooked them and ate them and raved about them some more. Then after a bit of rain, I discovered a whole new batch to pick and clean and cook…you get the point. It's kind of tedious. After a few rounds of picking and cleaning, I saw the value of picking with discernment
Chanterelles can be a bit dirty as the rain splashes up and splatters sand in the false gills on their underside. so you have to really rinse them.
And rinse them.
I discovered if you pick them in an undisturbed area with a nice bed of leaves, they are much cleaner and you can just cut the root of and dust them a touch.
I picked some nice ones today and tore them apart like flower petals.
Then I dry sauted them and prepared an egg wash and bread crumbs.
Then I fried them in canola oil.
They were absolutely delicious!
They are even more fun to eat than they are to pick.
They look so tasty!!!!
